Lemon & Honey Mustard Aioli

Time to get a little saucy for Spring. I love having a good sauce on hand to add a little more flavor or texture to a dish I’m making. This month I thought I’d share my current go-to sauce that I’ve been making lately. It’s great to pair with some sweet potato fries or to even put a dollop on a bed of sautéed greens. So delicious!

Get creative with this sauce. There are so many different combos of herbs that you can add to this, if you’d like. Try out different ones and see what catches your palate. Have fun with all the different flair profiles. 

Ok, here is goes… ridiculously simple:

Ingredients:

⅓ cup avo mayo (store bought or make it yourself ~~> lots of good recipes out there)

¼ cup stone ground mustard

1-2 T local honey (I go to my farmer’s market for this)

½ lemon- zest the rind and use juice

Sea salt to taste

Any herbs that are calling to you ~~> parsley, cilantro, mint, basil, dill… so many choices

Instructions:

Put all ingredients in a mason jar or small mixing bowl. See the beauty of all the ingredients you’re putting together. Smell them, notice their different textures, appreciate all the different tastes they hold. You can’t go wrong with this recipe. You can play with adding more honey if you want it sweeter or more mustard if you want a spicier flavor. Ask your body what it’s truly craving for that meal and modify the recipe to accommodate for that. 

I like to just whisk it all together and have a chunky version. You can also use a hand blender and get it really creamy, especially if you put a lot of herbs in yours. 

Add this spring sauciness to some homemade sweet potato fries or even some roasted fennel [drool]. Always allow yourself time to eat your meal. Make sure you’re sitting down without distractions so you can really appreciate all the flavors or your food. See your food as medicine and it will help you along your healing journey.
