Roasted Winter Root Veggies

Say hello to your new go-to winter side (or main dish!): Roasted Winter Root Veggies! This colorful, cozy dish is the perfect way to support your body through chilly winter days. Beets, carrots, and your favorite winter squash come together with a touch of healthy fat and warming spices to create a simple, feel-good recipe you can enjoy on its own or add your favorite protein (ethically raised meat, baked tofu, or top with some roasted pinenuts.


Grounding and nourishing for Winter Wellness!

 

Ingredients

  • 2–3 medium organic beets, cut into sticks

  • 3–4 organic carrots, washed but unpeeled (all the great vitamins are in the skin!)

  • 1 small winter squash (like delicata or kabocha), cubed

  • 2–3 tbsp healthy oil (ghee, avocado, or coconut are perfect)

  • 1 tbsp fennel seeds (add toward the end so they don’t burn)

  • Sea salt and freshly ground black pepper, to taste

  • Optional: other quick-cooking vegetables (like zucchini, bell pepper, or asparagus)

  • Fresh parsley or other herbs for finishing

Directions

  • Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper.

  • Place the root veggies in a heap on the parchment. Drizzle with oil and sprinkle with salt then toss. Let the oil sit on the parchment; it will help the veggies roast.

  • Roast for 7 minutes, then gently toss the veggies so the oil coats everything again.

  • Add any faster-cooking vegetables and fennel seeds, then roast for 7 more minutes.

  • Add final seasonings or fresh parsley, then roast for another 3–5 minutes, until all veggies are tender, caramelized, and easy to nibble.

Quick Ayurvedic serving suggestions

  • Vata: Use ghee for a warming touch; enjoy warm with a sprinkle of cinnamon or nutmeg.

  • Pitta: Use coconut oil and finish with fresh cooling herbs like parsley or cilantro.

  • Kapha: Not too much oil and add a pinch (or more) ground ginger.

Optimal Storage

  • Eat fresh or within 24 hours for the best flavor, texture, and nutrients.
