Lemon Ginger Energy Bits
[Vegan, gluten-free, dairy-free]
Ingredients:
1 cup sunflower seeds
1 Tbl coconut oil
½ cup tahini (creamy)
¼ cup fresh local honey
Zest of one lemon
2 Tbl lemon juice (organic!)
½ tsp cardamom
1 Tbl fresh ginger (organic!)
¾ cup shredded coconut
½ tsp himalayan or celtic sea salt
2 Tbl sesame seeds (for topping)
Instructions:
In a processor, blend sunflower seeds and coconut oil till you get a “crumbly nut butter.” Then add the rest of the ingredients. It’s important to have any fresh produce you use, such as the lemon and ginger be organic. Blend till it comes to a “dough like” consistency.
Scoop out the dough with a small ice cream scoop (1T measure) and roll in sesame seeds. Place on a plate and refrigerate for 20 mins.
Keep in the fridge until you’re ready to enjoy. Make sure to use organic produce when you are using the skin (zest for lemon) or any root veggie (ginger). You want to make sure you have the least amount of pesticides and chemicals on them. Even better, it’s good to grow them or get them from neighbors. When you eat them, make sure you’re sitting down and appreciating all the flavors. You only need 1 or 2 in the Spring/Summer season. Share with friends and family to see what they think.
