Easy Vegan Truffles
Based on Minimalist Baker recipe

Ingredients
TRUFFLES
· 1 cup raw pecans
· 1 cup raw cashews
· 10 whole medjool dates (pitted // if dried out, soak in warm water for 10 minutes then drain)
· 1/2 cup shredded coconut
· 1 Tbsp cacao powder or unsweetened cocoa powder
· 1/4 tsp sea salt
· 1 Tbsp warming spice: equal parts- dried ginger, cinnamon, and cardamom
· 1/4 cup almond butter
· 1 1/4 cups dairy-free dark chocolate (real chocolate bar, not chips // roughly chopped*)
· 1 tsp coconut oil
FOR TOPPING (optional)
· ~1/4 cup cacao nibs, crushed nuts, and/or sea salt for topping
Instructions
Place nuts and dates in a food processor or high speed blender and process until it reaches the consistency of a crumbly dough.
Add in the coconut, cocoa powder , salt, and warming spice. Continue pulsing until it forms into a ball.
Once you have a dough that’s easy to form into balls, scoop out 1 Tablespoon amounts and roll/carefully form into balls. I like using a small ice cream scoop. (If they aren’t quite forming, hold them in your palm and let the heat of your hand warm them, then gently shape into a loose ball.) Set on parchment paper and flatten the ball with a spoon to give it a small divot on top. Then add a small dollop of almond butter on each ball. Then place in the freezer to chill for 10-15 minutes– you should have about 14 truffles.
In the meantime, melt chocolate and coconut oil in a double boiler. Be careful not to overheat. The coconut oil helps the chocolate thin and ease the dipping process.
Remove truffles from the freezer and, one at a time, dip them into the melted chocolate. Use a fork to remove them and tap away excess chocolate. Transfer back onto parchment paper and top with sea salt, crushed nuts, or cacao nibs.
Repeat until all truffles are dipped. Put truffles back in the fridge to set. Keep them refrigerated for up to a week (they most likely won’t last that long!).
When you’re ready to eat them, make sure you sit and enjoy each bite. Take in the flavors and textures of the truffle. You don’t need more than one to satisfy you. Sharing with friends and family is always a great way to share in the joy of cooking.
