Lettuce & Pea Summer Soup
This is probably one of my favorite summer soups that’s satisfying and leaves you feeling light in your body. If you don’t have romaine lettuce, substituting celery is also really delicious. Be creative with the summer soup by adding other ingredients that are calling to you or subbing out something for another vegetable you’re wanting to try (leeks can be a great sub for the onion as well). Have fun with it!
What you will need:
1 medium onion
1 T avocado oil
1 head of Romaine lettuce
1 bag of frozen organic peas
2 cups of broth (I use chicken bone broth)
Handful of fresh mint
Salt to taste
Top with: lime juice and sprouted pumpkin seeds
Instruction:
In a medium sized soup pot, saute onion in avocado oil until it’s caramelized and soft. Then add the rest of the ingredients (except the mint) and let come to a boil. Let simmer for 5 minutes. Turn the burner off and let soup cool for 10-15 mins with the lid off the pot. Then add mint and blend with a hand blender right in the pot. You can also transfer into a blender and blend as well. Top a little lime juice and some sprouted pumpkin seeds. Both are great for summer weather.
Always make sure you sit down to eat. Try to avoid being in an environment where it’s too loud or distracted. Take time to look and smell the food before you eat… and always remember to take a moment of gratitude for the beautiful meal you have in front of you. See it as medicine and know it’s going into your body to nourish and heal your body.
