Banana Applesauce Muffins with Pecan Crumble

As we move into Spring, the body naturally begins to shed the heaviness of winter. According to Ayurveda, this is a season to support gentle detoxification while still staying grounded and nourished. These muffins strike that balance beautifully.

Made with almond flour, coconut, ripe fruit, and warming spices, they are naturally gluten-free, easy to digest, and deeply satisfying without being overly heavy. The subtle sweetness and healthy fats help stabilize energy, while the pecan crumble adds warmth and texture—making this a wonderful transitional recipe as the seasons shift.

Makes 12 muffins

Ingredients

  • 2 over-ripe bananas, mashed

  • ½ cup unsweetened applesauce

  • 2 eggs (room temp)

  • 2 cups almond flour

  • ½ cup unsweetened shredded coconut

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • ½ tsp fresh grated ginger

  • ¼ tsp salt

  • 1 tsp apple cider vinegar

  • 2 tbsp melted ghee or coconut oil

Pecan Crumble

  • ⅓ cup chopped pecans

  • 1–2 tbsp coconut sugar

  • Pinch of Maldon sea salt



Instructions

  • Preheat oven to 350°F and line or grease a muffin tin.

  • In a large bowl, mash bananas. Whisk in applesauce, eggs, apple cider vinegar, and ghee/oil if using.

  • Stir in baking soda, spices, and salt.

  • Fold in almond flour and shredded coconut until just combined.

  • Divide batter evenly into muffin cups (about ¾ full).

  • In a small bowl, mix pecans and coconut sugar. Sprinkle generously over each muffin and then add pinch of Maldon salt on each. (This is a sweet time to say a blessing or prayer for those that will be eating this delish muffins. ;)

  • Bake for 22–26 minutes, until set and lightly golden… and you’ll start to smell them. (drool)

  • Cool for 20 minutes… yep, you need to practice patience on this one… then, enjoy warm.
