Creamy Avocado Chia Pudding

Oh my gosh, this creamy avocado chia pudding is ridiculously simple to make and is a delicious way to begin the day. The healthy fat you get from the avocado, almond butter, and coconut milk are great sources of steady energy for your day. Then add in the chia seeds that keep the GI tract moving and you have a new morning favorite go-to recipe. 

It’s the kind of breakfast that feels like you're being naughty for a sweet treat and yet it’s so good for you — satisfying without heaviness and easy to prepare ahead so your mornings can begin with something calming to the nervous system. Much better than just grabbing a coffee on the go. Try it out a couple mornings this week and let me know what you think. 

Ingredients

  • 1 ripe avocado

  • 1 cup coconut milk (full fat for creaminess)

  • 2 Tbsp almond butter

  • 2–3 Tbsp chia seeds

  • 1–2 tsp raw honey (adjust to taste)

  • ½ tsp cardamom

  • ¼ tsp turmeric

  • ¼ tsp sea salt

  • ½ tsp vanilla extract

To top

  • Cacao nibs

  • Optional: toasted coconut flakes or chopped nuts


Directions

  • In a blender, combine the avocado, coconut milk, almond butter, honey, cardamom, turmeric, sea salt, and vanilla. Blend until completely smooth and creamy. 

  • Pour the mixture into a bowl or jar.

  • Stir in the chia seeds, mixing well so they distribute evenly.

  • Let sit for 10 minutes, then stir again to prevent clumping.

  • Refrigerate for at least 1–2 hours (or overnight) until the pudding thickens.

  • When ready to enjoy, give it a gentle stir and add toppings.

To Serve

Spoon into a bowl and top with cacao nibs and any other toppings that call to you. The nibs add a subtle chocolate flavor and a satisfying crunch that pairs beautifully with the warming spices.
