Ayurvedic Energy Bars

In today’s world, most prepackaged energy bars are designed for shelf life—not for true energy. They often contain processed ingredients that are far removed from the fresh, whole foods our bodies thrive on. Ayurveda reminds us that food is medicine, and when we prepare simple snacks with fresh, natural ingredients, we receive not just calories, but nourishment that truly supports our energy and balance. These homemade energy bars are a nourishing alternative you can feel good about taking on the go.
Ingredients
1 cup shaved unsweetened coconut
½ cup raw pumpkin seeds
½ cup raw sunflower seeds
2 Tbsp chia seeds
½ cup almond butter (or other favorite nut/seed butter)
⅓ cup honey
¼ tsp ground cardamom
1 tsp vanilla extract
¼ tsp sea salt
Instructions
Place all ingredients in a large mixing bowl.
Stir until everything is well combined and sticky.
Line a small baking dish or loaf pan with parchment paper, then press the mixture firmly into the pan. Smooth the top with a spoon or your hands.
Refrigerate for at least 1 hour, or until firm.
Lift out by the parchment, cut into bars or squares, and store in an airtight container in the fridge.
