Cleansing Beet Salad

This simple, refreshing salad helps you cool and clear heat from the body while gently supporting detox pathways—especially the liver and digestive system. Beets are known in Ayurveda for their ability to purify the blood, while ginger and lemon aid in digestion and keep things moving as we begin to shift toward the slower energy of Fall.

 

Serves 2–3 as a side dish

Ingredients

  • 2 medium raw red beets, peeled and finely shaved or julienned

  • 1-inch piece fresh ginger, grated

  • 1 small handful fresh cilantro, chopped

  • Juice of 1 lemon

  • ½ teaspoon lemon zest

  • 1–2 tablespoons pumpkin seeds (lightly toasted or even sprouted, optional)

  • Pinch of celtic sea salt or himalayan sea salt

  • Drizzle of olive oil or avocado oil

Instructions

  • In a mixing bowl, combine the shaved beets, ginger, cilantro, lemon juice, and zest.

  • Add a pinch of salt and a drizzle of oil, and toss well to coat.

  • Let the salad sit for 5–10 minutes to allow the flavors to mingle and soften the beets slightly.

  • Top with pumpkin seeds just before serving for a light crunch and added mineral support.
