Radiant Root Breakfast Cookies

A grounding, energizing bite for clarity, confidence & calm digestion.

 

These cookies are inspired by the Manipura Chakra—your center of willpower, transformation, and inner fire. With oats to ground, chia and seeds to fuel, almond butter for strength, and bright notes of orange zest to uplift, these little bites bring the perfect balance of nourishment and lightness for summer mornings.

 

Ingredients:

(makes 10–12 cookies)

  • 1 cup rolled oats

  • ½ cup almond butter

  • ¼ cup coconut oil (melted + slightly cooled)

  • ½ cup chopped dates (soaked if dry)

  • 1 ripe banana (or sub ¼ cup applesauce)

  • 1 Tbsp chia seeds

  • ¼ cup shredded carrots

  • 2–3 Tbsp pumpkin seeds (or sunflower seeds)

  • 1 tsp orange zest

  • ½ tsp cinnamon

  • 1 pinch cardamom

  • 1 tsp vanilla extract

  • Pinch of sea salt

  • Optional: 2 Tbsp shredded coconut or raisins

Instructions:

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.

  2. In a food processor or mixing bowl, blend almond butter, coconut oil, banana, dates, and vanilla until smooth.

  3. Stir in oats, chia seeds, carrots, pumpkin seeds, orange zest, cinnamon, cardamom, and salt. Mix until fully combined.

  4. Let the dough sit for 5–10 minutes so the chia can absorb moisture.

  5. Scoop into small rounds, flatten slightly, and bake for 12–14 minutes, until edges are lightly golden.

  6. Cool before storing. Keep in the fridge for up to 5 days.
