Cooling Coconut-Lime Energy Bites

Try these no-bake energy bites that are sweet, zesty, and full of summer vibes. With dates for sustained energy, coconut for healthy fats, and lime to keep things fresh, they’re great when you want something easy to digest and take with you for a day “on-the-go”!
Ingredients:
makes ~12 bites
1 cup Medjool dates, pitted (soak in warm water if dry)
½ cup shredded unsweetened coconut (plus more for rolling)
½ cup cashews or sunflower seeds (lightly toasted if desired)
Zest of 1 organic lime
Juice of ½ lime (or to taste)
1 tbsp coconut oil (optional, for extra richness)
Pinch of mineral salt
Optional: 1 tsp chia seeds or hemp seeds for extra texture
Instructions:
In a food processor, pulse cashews/seeds until finely ground.
Add dates, coconut, lime zest/juice, salt, and coconut oil. Process until sticky and well combine
Roll into bite-sized balls. If the mixture is too soft, chill for 10 minutes first.
Roll each bite in extra shredded coconut for a pretty finish.
Store in the fridge for up to a week—or freeze for longer shelf life.
