G.I. Jelly

This quick homemade jelly is one of my favs to have on-hand to keep my GI tract moving. It’s a good one!

The ingredients support digestion and it’s delish. No cooking, no refined sugar, and no need for gelatin or pectin.

It’s an easy recipe that is perfect to add a pop of flavor to toast or mix in your favorite morning oatmeal. 

 

Ingredients

  • ½ cup pomegranate juice

  • 1–2 Tbsp raw honey(adjust to taste)

  • 1 Tbsp chia seeds

  • 1 Tbsp fresh ground flax seeds

  • 1 tsp psyllium husk

  • Small pinch sea salt

  • 2 drops doTerra Lemon essential oil
    OR
    1 tsp fresh lemon juice

Directions

  1. Add the pomegranate juice, honey, sea salt, and lemon essential oil or lemon juice to a glass jar or bowl. Stir or shake well.

  2. Add the chia seeds, ground flax, and psyllium husk. Stir or shake again until everything is evenly combined.

  3. Let sit for about 10 minutes, then stir once more to help prevent clumping.

  4. Allow the jam to thicken for at least 30 minutes, or refrigerate overnight for an even richer texture.

Spread onto toast, spoon over oatmeal, swirl into yogurt, or pair with almond butter for a healthy PB&J… yum!

Storage

Store covered in the refrigerator for up to 5–7 days. The jam will continue to thicken slightly as it sits.
